This recipe actually comes from my husband. He is up late frequently working and since we don't ever have any "snack" foods in the house, he has to eat whatever leftovers are in the fridge, or get creative. This is one of his best creations. He took a very basic recipe, the omelet, an put a twist on it using some of his favorite flavors.
Indian Omelet
serves 1
2 eggs, lightly beaten
2-3 green onions
1 clove garlic, minced
1/4 tsp cumin
1/4 tsp turmeric
a pinch of cayenne
a pinch of sea salt
couple of sprigs cilantro, chopped
1 tablespoon olive oil, butter or coconut oil
hot sauce, optional
Thinly slice one of the green onions. Slice the other onion, thinly into long thin ribbons and set aside for garnish..
Heat the oil in a small pan over medium-low heat. Add the sliced green onions and garlic to the pan. Add the spices and cook until fragrant. Pour the eggs into the pan. Season with salt.
Pull the sides of the egg toward the center of the pan, letting the uncooked portion flow onto the exposed pan. When the eggs on bottom have set, pull the sides in again, lifting the edges and tilting the pan to allow the uncooked egg to flow under and cook. When most of the egg is set, add toppings. Cook for another minute and fold the omelet in half over itself and slide onto a plate. Top eggs with remaining green onion and cilantro. Serve with hot sauce, if desired.
