I am really bad about writing down recipes. I try new things, like them and then forget about them, because I rarely record what I have done, and I have a terrible memory. I am actively trying to record my recipes from now on. Last night, I made a winter slaw to go with some fish tacos and I loved it, so here it is for you to try and for me to remember.
Winter Slaw
1/4 red cabbage, shredded
1/4 white cabbage, shredded
1 small bunch kale, stems removed, shredded
4 carrots, julienned
several sprigs cilantro, minced
2 green onions, chopped
1/4 cup pepitas
dressing:
1/4 cup tahini
1-2 tablespoons honey or maple syrup to taste
juice of 1 large lemon or lime
water as needed for desired consistency
Combine the cabbage, kale, carrots, cilantro, green onions and pepitas in a large bowl. Set aside.
In a small bowl, combine ingredients for dressing. Pour over slaw, toss to combine and serve.
